I will come to your Home, Yacht, Outdoor or Hotel room with a Kitchen and prepare delicious dishes for you and your guests. Just let me know what you want whether it be cocktail party Hors d' oeuvres, a five course meal, a three course meal or your own selection of dishes. I work for small parties of 10 to 30 people.
My name is Mark Mckenzie originally from Montego Bay, Jamaica. I started my culinary career in 1987 at my high school's food and nutrition class.
In 1990 I started my first job as an apprentice cook at Sandals Royal Montego Bay Hotel and Resort where I was first exposed to Ice Sculpting and worked my way up to the position of Chef Gardemanger (a cold kitchen specialist).
In 1993 I started at Swept Away Resort, Negril Jamaica in the capacity of Executive Sous Chef for three years where I managed 36 kitchen employees and was given a free scholarship by the Hotel in 1995 to study at George Brown College School of Hospitality in Toronto, Canada. On returning to Jamaica that same year I earned my first Gold medal at the JCDC Culinary Competition held in Ocho Rios.
Beaches Negril, an all inclusive family resort came next door to Swept Away and I was offered the position of Chef de Cuisine in 1996 which I did for three years. At this job I managed four restaurants in the Hotel.
I moved to New York City in 1999 where I continued my culinary career working for upscale catering halls and country clubs on Long Island in the capacity of Sous Chef.
I started my ice sculpting and fruit carving business in Queens New York in 2005 which I have been doing up to present now in Florida.

2011 Bronx Zoo Ice Carving Competition, New York City. Dragonfly crafted from two blocks of ice and took me four hours to carve. First place winner, people's choice award, most creative ice sculpture and cash price of $1000.00.
